  • 2-3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1-2 green chilies, finely chopped (adjust to taste)
  • 1/2 cup fresh coriander leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup plain yogurt
  • 1 tablespoon gram flour (besan) or bread crumbs
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon paprika (optional, for color)
  • Salt to taste
  • 1 tablespoon lemon juice
For Grilling:
  • 2-3 tablespoons oil (vegetable oil or ghee)

Instructions:

Prepare the Meat Mixture:
  • In a large mixing bowl, combine the ground meat, finely chopped onions, garlic, ginger, green chilies, coriander leaves, mint leaves, and yogurt.
  • Add the gram flour or bread crumbs, cumin powder, coriander powder, garam masala, red chili powder, turmeric powder, paprika (if using), salt, and lemon juice.
  • Mix everything well, ensuring the spices and ingredients are evenly throughout the meat.
  • Cover the bowl and let the mixture marinate in the refrigerator for at least 1 hour, or preferably overnight. This helps the flavors to meld and the mixture to firm up.
