Ingredients:

  • 1 cup vermicelli (falooda sev)
  • 4 cups milk

  • 2 tablespoons soaked basil seeds (sabja)
  • 2 scoops of your favorite ice cream (traditionally, kulfi or vanilla)
  • Chopped nuts (like almonds, pistachios) and dried fruits (like raisins) for garnish
  • Ice cubes (optional)

Instructions:

  1. Prepare the Ingredients:
    • Soak the basil seeds in water for about 30 minutes until they swell up.
    • Cook the vermicelli (falooda sev) according to the package instructions until they are soft but not mushy. Once cooked, rinse them under cold water and set them aside to cool.
  2. Boil the Milk:
    • In a saucepan, bring the milk to a gentle boil over medium heat, stirring frequently to prevent it from sticking to the bottom of the pan.
    • Once the milk comes to a boil, add sugar and stir until it dissolves completely. Then, remove the pan from heat and let the milk cool down to room temperature.
  3. Assemble the Falooda:
    • Take serving glasses or bowls. Add a tablespoon of rose syrup to each glass.
    • Divide the cooked vermicelli equally among the glasses and pour the cooled milk over them, leaving some space on top.
    • Add a spoonful of soaked basil seeds (sabja) to each glass.
    • Place a scoop of ice cream on top of each glass.
  4. Garnish and Serve:
    • Garnish the falooda with chopped nuts and dried fruits of your choice.
    • Add a few ice cubes if desired for extra chill.
    • Serve immediately with a long spoon and a straw to enjoy all the layers of flavors and textures!
