Spinach Fusilli Pasta: A Nutritious and Flavorful Delight

Spinach fusilli pasta is a wholesome and vibrant dish that combines the earthy goodness of spinach with the comforting twist of fusilli noodles. Ingredients:

  • 400 grams of Fusilli pasta
  • 200 grams of fresh spinach, washed and chopped
  • 3 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 1 cup of heavy cream
  • 1/2 cup of grated Parmesan cheese
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Red pepper flakes (optional, for added heat)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the fusilli pasta in a large pot of salted boiling water according to the package instructions until al dente. Drain the pasta, reserving about 1/2 cup of the pasta water, and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until softened and fragrant, about 2-3 minutes.
  3. Add the chopped spinach to the skillet and cook until wilted, stirring occasionally, about 2-3 minutes.
  4. Pour in the heavy cream and stir to combine with the spinach mixture. Let the sauce simmer gently for 2-3 minutes.
  5. Gradually add the grated Parmesan cheese to the sauce, stirring constantly until the cheese is melted and the sauce is creamy.
  6. Season the sauce with salt, pepper, and red pepper flakes (if using), adjusting to taste.
  7. Add the cooked fusilli pasta to the skillet with the creamy spinach sauce. Toss the pasta until well coated in the sauce, adding some of the reserved pasta water if needed to loosen the sauce.
  8. Cook the pasta and sauce together for another minute or two, allowing the flavors to meld together.
  9. Once ready, remove the skillet from heat and garnish the creamy spinach fusilli pasta with freshly chopped parsley.
  10. Serve hot and enjoy your delicious homemade creamy spinach fusilli pasta!
