  • 1 teaspoon vanilla extract

Instructions:

  1. In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt until well combined.
  2. Gradually whisk in the milk until smooth and no lumps remain.
  3. Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a gentle boil, about 8-10 minutes.
  4. Remove the saucepan from the heat and add the chopped chocolate and vanilla extract. Stir until the chocolate is completely melted and the pudding is smooth and well combined.
  5. If you prefer a smoother texture, you can strain the pudding through a fine-mesh sieve to remove any lumps.
  6. Pour the pudding into individual serving dishes or one large bowl.
  7. Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming.
  8. Chill the pudding in the refrigerator for at least 2 hours, or until set.
  9. Serve the chocolate pudding chilled, topped with whipped cream or fresh berries if desired.
